The Session-able Negroni is my spin on the cocktail classic... By halving the volume of Campari we have reduced the bitterness and made a more relaxed and enjoyable cocktail.
1 Nip (30ml) Dobson's New England Dry Gin.
1/2 Nip (15ml) Campari.
1/2 Nip (15ml) Dobson's Beauregards Mouse (Brandy & Triple sec
liqueur)
1/2 Nip (15ml) Maidenii Sweet Vermouth
1 spray Dobson's Bitters (10 inches above glass)

Dobson's Espresso Martini is so easy, because we take the job of making the coffee so seriously ... Our Le Caf contains a blend of coffee which is directly copied from my favourite stand up coffee bar in Rome. Made locally by Altitude Coffee Roasters Armidale....
1 Nip Dobson's Le Caf Coffee & Maple Syrup Liqueur
1 Nip Dobson's Pure Vodka.
Stirred.
Serve in a martini glass ... gently spoon pre softened ice cream onto the surface ... then sprinkle with shaved Belgian Dark Chocolate flakes and top with a coffee bean.

Mango Dubango is the brilliant creation of "The Tsar of the Bar"... The Legend...Sophie Watson...
For this cocktail you will require a blender capable of blitzing ice to "smoothie" consistency
2 Cups ice... blended till smooth.
1 cup frozen Mango Pulp
1 Nip (30ml) Pure Vodka
1 Nip (30ml) Dobson's Orangerie Triple-sec
1 Nip (30 ml) Bickfords Mango Iced Tea Cordial
1 leaf of mint added to the blender
Blitz in the Blender till the consistency of a fruit smoothie.
Spray with Dobson's Bitters
Garnish with a sprig of Mint.
